Simple Short Bread Cookies with a Bourbon Caramel Glaze

Preheat oven to 350 degrees


Shortbread Cookies

1 cup butter (softened)

3/4 cup powdered sugar

1 tsp vanilla

2 1/2 cups all purpose flower

– Line a baking sheet with parchment paper

– Mix all ingredients in a large bowl until combined

– Roll dough until about 1/2 inch thick

– Cut dough into desired shapes (I like 2 inch rounds)

– Place rounds on baking sheet about 1/2 inch apart

– Bake 14-16 minutes or until a light golden color


Bourbon Caramel Glaze 

1 cup sugar

1/4 cup water

1/2 cup cream

1 tbsp good quality Bourbon


Using a stand up mixer, cream all ingredients together on medium-low until well incorporated (sugar should not be grainy)


Once cookies are done, remove from oven and place on a cooling rack immediately.  Let cool for 2-3 minutes.  Stack cookies and top with your favorite ice cream and warm Caramel Bourbon sauce!
